Can overtime be offered to cover the work previously undertaken by people now made redundant?

Can a company offer the remaining employees overtime to do the same job after making people redundant?

They probably can. If the redundancies were the result of a staff re-organisation on the basis that less employees would be employed, but those employees who do remain can work overtime from to time, this is likely to be a genuine redundancy.

If you believe that your redundancy is not genuine you can issue proceedings against your former employer claiming unfair dismissal. Please note however that proceedings of this type can only be brought within three months from the date of the end of your employment - although this time may possibly be extended if internal grievance proceedings have been followed.
